Beef Tenderloin

5 lb. beef tenderloin
2 T. dried rosemary
3 T. cracked pepper
¼ c. soy sauce
4 T. butter, softened
1 small garlic clove, crushed
Make a paste of the five ingredients above.
Rub on tenderloin and refrigerate for 1-2 hours
Preheat oven to 500 degrees. Place tenderloin on rack pan and put in oven. Immediately lower temperature to 400 degrees. Cook until meat thermometer registers 140 degrees. (Approx 30 min)
Horseradish sauce:
1 ¼ c. mayo
1 ½ c. sour cream
¼ c. drained horseradish
¼ c. capers
Open Faced Steak Sandwiches
These are really easy to make and great for a small get together!
-3 medium strip steaks (fat trimmed and marinated)
-3 yellow onions, caramelized
-Horseradish sauce (creamed horseradish, mayo, Dijon mustard)
-Havarti cheese, sliced thin
-1 loaf long french bread
1. Marinate strip steaks in teriyaki, soy sauce, worchestire, garlic, salt and pepper 12-24 hours (flip once).
2. Mix together ingredients for horseradish mayo and chill
3. Caramelize onions, add salt and pepper
4. Cook steaks on the grill or in a pan to medium rare, let sit, and slice
4. Cut French bread in half lengthwise and then into sandwich size pieces
5. Spread horseradish sauce lightly on each piece, top with onions, slices of beef and Havarti
6. Bake on 360 for 5-10 minutes or until warmed through and cheese is melted
(I made the sauce and onions the night before so it was quick to put together)
